Grilling is the process of cooking food over a fire (or other heat source) either on a solid surface with raised ridges (i.e. a grill pan) or bars with openings in between. Grilling uses higher temperatures; the heat transfers from the fire (or other heat source) and through the grill grates. Griddling transfers the heat from the metal surface to the food resulting in more even cooking and browning
