Lobster Quesadilla with Mango Salsa

So I was sitting at my computer working from home and i realized I did not have a meal for my weekly show. Then I remembered I had some lobster tails in my freezer. So I steamed and chopped the lobster tail meat and made quesadilla with and topped it with the same salsa I make for my Jerk Chicken Stuffed Sweet Potato. At Create Simple Meals we believe in using what we have done for other meals and repurposing it for a new meal.

Whole Baked Fish with Ginger Sauce

I often visit a local market/fish monger and they always have various fish that I am not accustomed to. My wife has been asking to try more fish recipes, So i said hey lets step out of our comfort zone and try something new. I used Golden Pompano which has a very mild taste and light texture, however this recipe will work with similar fish such as Atlantic Butterfish, Mahi-mahi, or Tuna which is meatier with a stronger flavor

Buttermilk Fried Calamari

So, I absolutely love Calamari, but I don’t always want to go to a restaurant to enjoy it, and the frozen versions just never quite hit the spot. So I decided to make my own. If you are lucky (for those that are squeamish) you may be able to find some squid that is already cut, but it not throw caution into the wind that try something new, you may just be surprised and what you can do with a little Passion, Patience and Practice

Filleted Fish Sandwich

One of my guilty pleasure is the Filet-O Fish Sandwich. I love when they have the $2.50 sale, lol. It is said that an Ohio franchise operator, Lou Groen, was having difficulty selling the hamburgers on Fridays during Lent. He noticed a nearby restaurant seeming to have great success selling battered fish sandwich's. He contacted the powers that be and presented his new creations and the infamous sandwich was created.
