The Ingredients & Instructions:
Ingredients
- 4 large BASS FILLETS, (or other white flaky fish)
- 2 tsp SALT
- 1 tsp PEPPER
- 1 cup FLOUR
- 4 tbsp BUTTER, divided
- 1 tbs OLIVE OIL
- 2 cloves of GARLIC, minced
- 1 tbs BASIL
- 1 tbs PARSLEY
- 1 tbs OREGANO
- 2 tbsp fresh LEMON JUICE
Instructions
- Season the FILLETS with SALT and PEPPER.
- Pat the FISH dry with a paper towel.
- In a shallow dish, mix the FLOUR, SALT, and BLACK pepper.
- Dredge each piece of FISH in the FLOUR mixture, coating the entire surface, and shake off any excess.
- In a large skillet melt 2 tbsp of the BUTTER over medium high heat and add the OLIVE OIL.
- Cook the FISH in the skillet for 3-4 minutes on each side, until golden brown and fully cooked.
- Remove FISH from the skillet to a plate.
- Turn down the heat to low and add the remaining BUTTER and GARLIC.
- Add the HERBS to the skillet and sauté about 30 seconds.
- Turn off heat and the LEMON JUICE, taste and adjust seasoning if necessary.
- Serve sauce on top of FISH
