August 30, 2020Ultimate Salmon Croquette....Simple Twist on an Old Classic!
The Ingredients & Instructions:
Ingredients
- 2 cans SALMON (flaked)
- 2 to 3 tablespoons GREEN ONION
- 1 small RED ONION (Diced)
- 1 ½ tsp Creole Seasoning
- 1 tsp Garlic POWDER
- 1 tbsp WORCESTERSHIRE SAUCE (Optional)
- 1 tsp Hot Sauce (Optional)
- 2 large EGGS
- 1/3 to 1/2 cup PANKO BREAD CRUMBS
- 3 ANDOUILLE SAUSAGES LINKS (Diced)
- CRAWFISH TAILS
- VEGETABLE OIL for frying.
Instructions
- In a nonstick sauté over med-high heat cook diced ANDOUILLE SAUSAGES LINKS until they begin to brown.
- Add RED ONION and continue cooking over medium heat just until ONIONS begin to soften.
- Add CRAWFISH TAILS mix to warm the TAILS, season with Garlic and set aside.
- Drain SALMON (reserving liquid in case you need to moisten the mixture)
- Mix the SALMON with the SAUSAGE MIXTURE and the GREEN ONIONS.
- Season with CREOLE SEASONING, WORCESTERSHIRE, and HOT SAUCE (taste and adjust seasoning
- Mix in PANKO and EGGS.
- Form into patties and roll in more PANKO
- Fry PATTIES in VEGETABLE OIL about 2-3 minute per side.
