The Ingredients & Instructions:
Ingredients
- 2 tbsp OIL
- 1lb SAUSAGE, (sliced into ¼ in slices)
- 1lb CHICKEN BREAST, (diced)
- 1 med ONION, (diced)
- 1 med BELL PEPPER, (diced)
- 1 cup CELERY, (diced)
- 3 cloves GARLIC, (minced)
- 2 tsp CREOLE SEASON
- 1 BAY LEAF
- 1 cup uncooked LONG GRAIN RICE
- 1 14.5 oz can DICED TOMATOES
- 1 ½ cups CHICKEN BROTH
- 4 SCALLION, (thinly sliced)
Instructions
- Add OIL and sauté sliced SAUSAGE in the pressure cooker about 5 minutes or until browned. Remove and set aside on a paper towel-lined plate.
- Add the ONIONS, BELL PEPPERS, CELERY, and GARLIC and sauté until ONIONS turn soft and clear.
- Add the diced CHICKEN BREAST and brown, but do not cook all the way.
- Add the CREOLE SEASON, BAY LEAF, and RICE. Stir until the RICE is well coated in the OIL.
- Add the TOMATOES with juice and the CHICKEN BROTH and stir.
- Close pressure cooker and pressure cook on high for 8 minutes.
- Allow the pressure to release naturally for 5 minutes, then manually release the pressure.
- Remove lid and use a stir the RICE, then mix in the SCALLIONS and SAUSAGE.
- Replace the lid and allow the SAUSAGES to come to temperature for 5 minutes in residual heat. Adjust seasoning as necessary.
