The Ingredients & Instructions:
Ingredients
- 1 lb PASTA
- 1 lb. GROUND MEAT, (optional)
- 1/4 cup EXTRA VIRGIN OLIVE OIL
- 1 medium YELLOW ONION, (diced)
- 3 GARLIC CLOVES, (finely minced)
- 1 YELLOW SQUASH, (dice)
- 1 ZUCCHINI, (dice)
- 28 oz canned CRUSHED TOMATOES
- 1/2 cup PASTA WATER
- 1 tsp KOSHER SALT
- 1 tsp BLACK PEPPER
- 1 tbsp DRIED OREGANO
- 1 tsp PAPRIKA
- 1/8 tsp RED PEPPER FLAKES, (optional)
- 1/2 cup FRESH BASIL, (torn)
- 1/2 cup FRESH PARSLEY, (chopped)
Instructions
- Boil PASTA according to package, drain and reserve the PASTA WATER.
- If adding MEAT, brown the MEAT in a large pan, drain MEAT, remove from pan and set aside.
- In the same large pan heat the EXTRA VIRGIN OLIVE OIL over medium heat and sauté the ONIONS, and GARLIC until. Cook for about 5 minutes, stirring regularly until softened
- Add in the YELLOW SQUASH and ZUCCHINI and continue sautéing till softened
- Add the CRUSHED TOMATOES and about 1/2 cup of the PASTA WATER.
- Add the SALT, PEPPER, OREGANO, PAPRIKA, and CRUSHED PEPPER FLAKES, if using.
- Stir in the FRESH BASIL and PARSLEY.
- Bring the SAUCE to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes.
- If the sauce is too thick, you can add a bit more PASTA WATER.
- Toss or serve on top of cooked PASTA.
