The Ingredients & Instructions:
Ingredients
- 10 - 12lb BRISKET
- ½ Cup CHILI POWDER
- 1/3 Cup KOSHER SALT
- 1/3 Cup PAPRIKA
- 1/3 Cup ONION POWDER
- 1 Tbs CAYENE
- 1 Tbs GARLIC
- Mustard (for adhesion)
Instructions
- Mix all DRY SEASONINGS in small bowl.
- Trim all but 1/4 inch of fat from the BRISKET
- Smear a small amount of MUSTARD on both sides of the BRISKET and season with the SEASON BLEND.
- Wrap BRISKET in plastic wrap and refrigerate over night.
- Remove Brisket and let it come to room temperature.
- In a smoker or Grill with charcoal off set to one side, get your temperature between 225-and 250.
- Maintain the temperature and smoke the BRISKET unit it reaches 190
- Wrap Brisket in foil and place in cooler for at least 1 hour or until ready to slice and serve.
- Serve immediately or sauce with our CSM HOME MADE BBQ SAUCE
