The Ingredients & Instructions:
Ingredients
- 1 diced VIDALIA ONION
- 2 minced cloves GARLIC
- 1 tbsp EXTRA VIRGIN OLIVE OIL
- 28 oz canned CRUSHED or DICED TOMATOES
- 1 cup CHICKEN BROTH
- 3 oz CREAM CHEESE
- 1 tsp SUGAR
- 1 tbsp TOMATO PASTE
- 1/4 cup chopped FRESH BASIL or 1 tbsp DRIED BASIL
- 1/4 tsp DRIED OREGANO
- 1/2 tsp SALT
- 1/2 tsp PEPPER
Instructions
- In your pressure cooker, sauté the ONIONS in the OLIVE OIL until tender.
- Add GARLIC and stir.
- Add BROTH and scrape with spatula.
- Add SUGAR, OREGANO, BASIL, SALT, PEPPER, TOMATOES, and TOMATO PASTE.
- Seal and cook on high pressure for 15 minutes and let the pressure naturally release for 10 minutes.
- With an immersion blender or in a food process blend the SOUP, until smooth.
- Adjust seasoning by adding more of the BASIL, OREGANO, SALT, PEPPER, or SUGAR to your preference.
- Mix in the CREAM CHEESE to thicken
Goes Great with Grilled Cheese or Garlic Bread.
