Tuscan Chicken and Pasta Chicken

The Ingredients & Instructions:
Ingredients
- 1 lb. SALMON
- 1/2 tsp. KOSHER SALT
- 1/4 tsp BLACK PEPPER
- 1 tbsp. CAJUN SEASON
- 2 tbsp. EXTRA-VIRGIN OLIVE OIL
- 1 cup. diced PINEAPPLE
- 2 diced AVOCADOS
- 1/4 c. diced RED ONION
- 2 small diced TOMATOES
- 2 tbsp. fresh LIME JUICE
- 6 CORN TORTILLAS
Instructions
- In a medium bowl, add PINEAPPLE, AVOCADO, ONION, TOMATOES, and LIME JUICE. Season with SALT and toss to combine and then set aside.
- Pat SALMON dry and season all sides with SALT, PEPPER, and CAJUN SEASON.
- In a large skillet heat the OIL over medium heat and pan fry the SALMON on both sides until it reaches an internal temperature of 145°.
- Let SALMON rest and cool slightly, then flake into large pieces.
- Assemble TACOS: Top TORTILLAS with SALMON and PINEAPPLE SALSA.
