Sweet and Savory Marinated Salmon

Great addition to grilled salmon!
The Ingredients & Instructions:
Ingredients
- 2 tbsp. OLIVE OIL
- ¾ cup finely chopped RED ONION
- 2 minced cloves GARLIC
- 1 quart CHICKEN BROTH
- 1 cup coarse ground CORNMEAL
- 3 tbsp. BUTTER
- 1 ½ tsp. KOSHER SALT
- ¼ tsp. ground BLACK PEPPER
- 2 oz grated PARMESAN CHEESE
Instructions
- In a large saucepan heat the OLIVE OIL over medium heat and add the RED ONION and SALT and sweat until the ONIONS begin to turn translucent.
- Reduce the heat to low, add the GARLIC, and saute for 1 to 2 minutes, making sure the GARLIC not burn.
- Turn the heat up to high, add the CHICKEN STOCK, bring to a boil.
- Gradually add the CORNMEAL while continually whisking.
- Once you have added all the CORNMEAL, reduce to a simmer, and cover the pot, stirring periodically until the Polenta has a porridge consistency.
- Once the mixture is creamy, remove from the stove and add the BUTTER, SALT and PEPPER.
- Gradually add the Parmesan.
