The Ingredients & Instructions:
Ingredients
- ¼ cup JERK SAUCE/SEASONING
- 1 cup. diced PINEAPPLE
- ¼ cup diced RED ONION
- ¼ cup diced RED BELL PEPPER
- ¼ cup diced GREEN BELL PEPPER
- ¼ cup chopped CILANTRO
- 1 diced JALEPENO
- 2 tbsp. fresh LEMON JUICE
- 2 cups shredded MONTEREY JACK CHEESE
- 4 10-inch FLOUR TORTILLA SHELLS
- 2 tbsp. vegetable OIL
- 4 tbsp. BUTTER, divided
Instructions
- In a medium bowl combine SHRIMP, JERK SEASONING, PINEAPPLE, RED ONION, BELL PEPPERS, CILANTRO, and LEMON JUICE and let marinate for at least 20 minutes
- In a large skillet sauté the MARINATED SHRIMP until the SHRIMP are completely cooked.
- Remove the SHRIMP and wipe the skillet clean
- Heat 1 tbsp. BUTTER in a large skillet over medium heat.
- Add the TORTILLA SHELL and top with ½ cup of MONTEREY JACK CHEESE and 1 cup of the COOKED SHRIMP FILLING
- As the CHEESE melts, fold the TORTILLA in half and cook on each side until golden brown. REPEAT with remaining TORTILLAS
