Creamy Fettuccine Alfredo and Prosciutto

The Ingredients & Instructions:
Ingredients
- 2 cups cold left-over MASHED POTATOES
- 1 large beaten EGG
- 5 diced GREEN ONIONS
- ¼ cup ALL-PURPOSE FLOUR
- ½ cup grated CHEESE
- ¼ tsp. KOSHER SALT
- pinch of BLACK PEPPER
- 2 tbsp. OLIVE OIL
- 2 tbsp. BUTTER
- 1 cup PANKO BREAD CRUMBS
Instructions
- Mix together the MASHED POTATOES, EGG, and GREEN ONIONS in a medium bowl.
- Add the FLOUR, CHEESE, SALT, and PEPPER, and stir well.
- Using an ice cream for even sizes scoop out POTATO MIXTURE and roll into a ball
- Roll the POTATO BALLS in the PANKO BREAD CRUMBS
- In a large nonstick skillet over medium heat, heat the OLIVE OIL and melt the BUTTER.
- Place the POTATO BALLS into the frying pan and flatten with a spatula to roughly ½ inch thick.
- Cook the POTATO PATTIES until they are browned and crisp on both sides
- Remove the POTATO PATTIES from the pan and drain briefly on paper towels.
