Not Just For New Years!!
The Ingredients & Instructions:
Ingredients
- 1 tbsp COOKING OIL or BACON GREASE
- 1 lb. dried BLACK-EYED PEAS
- 1 cup chopped ONIONS
- 1 diced CELERY STALK
- 1 diced GREEN BELL PEPPER
- 4 cups CHICKEN BROTH
- 1 tbsp. GARLIC POWDER
- 1 tbsp CAJUN SEASONING
- ½ tsp ONION POWDER
- 1 BAY LEAF
- 1lb SMOKED MEAT
- KOSHER SALT and BLACK PEPPER to taste
Instructions
- If using the stove top method, rinse and soak the BLACK-EYED PEAS overnight, then drain them.
- Add oil to pot and sauté ONIONS, CELERY, and BELL PEPPER until tender
- Mix in the BLACK-EYED PEAS and then cover with the CHICKEN BROTH, add the GARLIC POWDER, CAJUN SEASONING, ONION POWDER and stir to combine.
- Add the SMOKED MEAT and BAY LEAF
- If using a pressure cooker, lock the lid and cook for 50 minutes, let the cooker naturally release. If you are doing them on the stove top bring the BROTH to a boil, reduce to low, cover and continue cooking for 1 hour or until the BLACK-EYED PEAS are tender
- Smash about half of the BLACK-EYED PEAS with a fork and simmer for 3-5 minutes or until the LIQUID begins to thicken
- Adjust season with SALT and PEPPER if necessary, and serve over white rice if desired
