The Ingredients & Instructions:
Ingredients
- 2 tbsp. OLIVE OIL, divided
- 1 tsp. KOSHER SALT divided
- 1 tbsp. dried ITALIAN SEASONING
- 2 tsp GARLIC POWDER,
- 1 ½ lbs. diced BONELESS SKINLESS CHICKEN BREASTS
- 1 cup sliced BELL PEPPER
- ½ cup sliced ONION
- 1 cup chopped ZUCCHINI
- 2 minced GARLIC CLOVES
- 1 15 oz can DICED TOMATOES
- 1 tbsp. TOMATO PASTE
- ½ cup grated ITALIAN CHEESE BLEND
Instructions
- Season the CHICKEN with 1 tsp. of the KOSHERS SALT, ITALIAN SEASONING, and GARLIC POWDER
- In a large skillet heat 1 tbsp. of OLIVE OIL over medium high heat.
- Add the seasoned CHICKEN and cook until golden brown; remove from the pan and set aside.
- In the same pan, heat the remaining 1 tablespoon OLIVE OIL. Add the ZUCCHINI, BELL PEPPERS, ONIONS, and season with remaining SALT and cook while stirring until tender.
- Add the GARLIC, and cook until fragrant, about 1 minutes, stirring occasionally.
- Add the TOMATO PASTE and DICED TOMATOES, stirring until well combined.
- Add the cooked CHICKEN back to the pan, turn the heat to medium low, and simmer uncovered for 5 minutes, top with CHEESE and cover to melt.
