Buttermilk Fried Calamari

The Ingredients & Instructions:
Ingredients
- ½ tsp. GARLIC POWDER
- ½ tsp. SALT
- 1 ½ cups PANKO,
Japanese-style breadcrumbs - ¾ cup BUTTERMILK
- 4 FISH FILLETS
- OIL, for frying
- KOSHER SALT, for finishing
- 4 slices YELLOW AMERICAN CHEESE
- 4 HAMBURGER BUNS
- 4 tbsp. TARTAR SAUCE
Instructions
- In a deep fryer or skillet, preheat OIL to 325°F.
- Combine the GARLIC POWDER and KOSHER SALT and evenly sprinkle on both sides of the FISH FILLETS.
- In 2 separate shallow dishes, pour the BUTTERMILK and the PANKO. Dip each piece of FISH one at a time into BUTTERMILK and then dredge in PANKO.
- Fry each FILLET until they reach a minimum of 145°F, finish each with a pinch of KOSHER SALT.
- Place 1 slice of CHEESE on each bottom HAMBURGER BUN, top with 1 FISH FILLET and 1 tbsp. of TARTAR SAUCE, place the top HAMBURGER BUN
