Filleted Fish Sandwich

The Ingredients & Instructions:
Ingredients
- 3 cups shredded PEPPER JACK CHEESE, divided
- 4 oz. softened CREAM CHEESE
- 1 tsp. CREOLE SEASON
- 1 cup diced ANDOUILLE SAUSAGE
- 1 cup CRAWFISH TAILS
- 1 cup chopped SWEET BELL PEPPERS
- 8 slices of BRIOCHE BREAD
- Butter, softened
Instructions
- In a bowl combine the 2 cups of the PEPPER JACK, CREAM CHEESE and CREOLE SEASON
- In a skillet, brown the ANDOUILLE SAUSAGE, and set aside to cool
- In the same skillet over medium heat lightly sauté the CRAWFISH TAILS and SWEET BELL PEPPERS and set aside to cool.
- Fold the SAUSAGE, CRAWFISH TAILS, and SWEET BELL PEPPERS into the CHEESE MIXTURE
- BUTTER 1 side of each slice of BREAD, and top one half of the SANDWICH with 1 cup of the PREPARED FILLING and ¼ cup of the remaining PEPPER JACK CHEESE
- Grill it in a frying pan over medium heat skillet until the BREAD is golden brown on both sides.
