The Ingredients & Instructions:
Ingredients
- 5 CATFISH FILLETS
- 3 cups CORN MEAL
- 1 cup CORNSTARCH
- 4 tbsp YELLOW MUSTARD
- 2 tbsp CREOLE SEASONING
- 1/2 cup HOT SAUCE
- 1 tbsp PAPRIKA
- 1 tbsp BLACK PEPPER
- 1 tbsp GARLIC POWDER
- 1 tbsp ONION POWDER
- 1 tsp LEMON PEPPER, (optional)
Instructions
- Rinse and pat dry the CATFISH FILLETS, and place in a large bowl
- Heat the OIL to 350°F in a large Dutch oven or Deep Fryer.
- In a small bowl mix together the CREOLE SEASONING, PAPRIKA, BLACK PEPPER, GARLIC POWDER, ONION POWDER, and optional LEMON PEPPER
- In a resealable bag, mix together the CORNMEAL and the CORNSTARCH
- Add 2 tbsp. of the SEASON BLEND to the resealable bag and mix well
- Add the HOT SAUCE and YELLOW MUSTARD to the remaining SEASON BLEND and mix it to form a paste
- Add the paste to the bowl containing the CATFISH FILLETS and mix well
- One by one, add each covered CATFISH FILLETS to the reaseable bag of CORNMEAL and the CORNSTARCH, and shake well to cover
- Fry the FILLETS in batches for about 5 to 8 minutes or until they are golden brown and have a minimal internal temperature of 145° F.
